I've found the answer. You run up the Status utility, and on the Display menu select Supplies Status. Set the warning level to 100% (or more than the remaining toner) and quit the utility. Re-open it, and Toner Replace on the Print menu won't be greyed out any longer. Go into Toner Replace and select the colour toner you need to access. Remember to set the supplies warning level back to 10% afterwards.
